Easy Shrimp Salad

I don’t know about you, but I cannot wait to head home for the holidays this weekend.  Family, friends, and FEASTS await! I’m getting antsy just thinking about it.  Alas, there are still two days standing in my way, and I think I might as well get some nutrition in now.  This shrimp salad is cheap, easy and deliciously satisfying.

You’ll need a tomato, 1 ball of mozzarella, spinach, avocado, lemon, olive oil, and 1 package peeled frozen shrimp.  Simply cook the shrimp in a pan on the stove top, chop up the tomato, mozzarella, and avocado, and toss on a bed of spinach.  For a super light dressing, drizzle on olive oil and squeeze half a lemon’s worth of juice.  Add on any other salad components you like!

Smoked Salmon Toast Snack

Happy Wednesday and a belated Happy Veterans Day! How many of you fellow DCers made it to The Concert for Valor on the Mall last night? Thousands of people packed themselves in front of our nation’s capitol to celebrate all veterans, active duty service members, and their families in honor of their monumental courage and sacrifice.  In between performances by Jennifer Hudson, Jessie J, The Black Keys, Dave Grohl, The Zac Brown Band, Carrie Underwood, Bruce Springsteen, Metallica, Rihanna and Eminem, the jumbotrons broadcast awe-inspiring stories about these veterans, about what they have achieved, and the incredible obstacles they have overcome.  These veterans were in the audience, getting the standing ovation that they deserve.  It was almost surreal to witness this directly in front of the Capitol building, and no one could have asked for a more beautiful November night.  My friend and I, both lucky to have the day off, parked ourselves on the Mall very early in the afternoon to secure a great viewing spot and enjoy what was undoubtedly one of our last 70 degree days in DC.  I doubt you’re surprised at this point that I made sure to bring snacks.  What I decided upon is a recipe idea I stole from a great friend at my August birthday gathering, and all you need is four ingredients!  Stop by Trader Joe’s and pick up:

  • Sliced loaf of Whole Wheat bread
  • One avocado
  • Small package of herb goat cheese
  • Small package of smoked salmon ($7.99 and the most expensive item)

Toast the bread and spread on the goodness! The goat cheese adds an awesome zing under the smoothness of the salmon, and it’s a snack full of protein and good-for-you fat so it will tide you over (even while you wait for five hours on the National Mall).  Tried and true success!

Ode to the Killer Egg Sandwich

Apologies for the blog hiatus, but happy post-Labor day everyone! I hope you all were able to enjoy an awesome long weekend.  I for one had the privilege of attending Budweiser’s Made in America Festival in Philadelphia, during which Beyonce and several others officially rocked my world.  Upon returning to the District, my next point of focus was what I could eat- something both delicious and nutritious to refuel the bod.  My immediate decision: the Killer Egg Sandwich.  This has been an evolving creation over the past few years, and is such a nommy staple that my roommate decided there had to be a “Killer” in the title.  Perfect for any time of day, all you need is an egg, bread/english muffin, and whatever else you wanna nosh on.  The following haiku duo (yes, instructional poetry) outlines the ensemble of my favorite version of the Killer Egg (pictured):

Need English muffin,

Salsa adds a spicy twist.

Fry that egg with cheese!

 

Time to compile,

Avocado is your friend.

Get in my belly!

 

Additional tip: Spread your favorite flavor of Laughing Cow cheese (approx $3 for the wheel) on the inside of both English muffin slices for an added flavor layer.  My go-to is Garlic & Herb- a zesty surprise.

Nommin’ Out: Shaws Tavern

Enter the Shaw Burger- one of the finest nommables I’ve consumed thus far in DC.  My friends and I have made Shaws Tavern on 6th and Florida Ave a Sunday brunch habit- it’s not fussy, you can always get seated (granted for parties of 8 or less), the service is super friendly, and they have a $12 bottomless mimosa special that one expects at a great brunch spot.  While the entire menu is impressive, the burger is by far the best thing on it.  I get this bad boy almost every time.  Comes with fries (ask for truffled for an extra couple buckaroos) or a salad (Caesar pictured).  You have a plethora of cheese options, including cheddar (pictured) and goat.  Then there’s AVOCADO, sauteed onions, jalapenos, bacon, mushrooms, and/or a fried green tomato.  I like my toppings a plenty, so granted this adds up.  That’s why I also try and go on Tuesdays when burgers are HALF OFF from 5-11pm.  And that’s just their Tuesday event.  

Shaws Tavern has a calendar on their page that boasts Soul Sundays, Trivia Mondays, Piano Bar Wednesdays, and Jazz Thursdays.   On Wednesday and Thursday nights, sit at the bar, chat with the knowledgeable and amicable bartenders, order a specialty drink and let the tunes sooth you.  For all you gin drinkers out there, I highly recommend the Lime Aviation, which features a splash of Creme de Violette for a twist.  I might be the chick on the stool next to you.
