Valentine’s Day Special: Treat Yo’self (and whomever else you so choose)

Happy Valentine’s Day lovebirds! And, arguably more importantly, happy Friday! Some of you probably abhor this “Hallmark Holiday”.  Some of you probably can’t wait to peace out of work and run into the arms of your beloved.  Regardless of your sentiments, you will all probably be hungry in a few hours.  So why not fill your bod with some food lovin’? Below is a meal that I guarantee will make your heart flutter tonight, whether you decide to share it with someone special or are planning on a Netflix solo binge session (House of Cards, anyone?).  I have to thank Buzzfeed for the main dish, which was one of many scrumptious alternatives on their article 51 Healthy Weeknight Dinners That’ll Make You Feel Great. The dessert recipe comes courtesy of my lovely roommate’s Pinterest account, and, full disclosure, she did all of the baking.

Baked Chicken Meatballs with Peperonata

Anyone who knows me well is fully aware of my affinity for meatballs.  It’s honestly kind of aggressive.  I blame my mother for getting me hooked on her special meatball recipe when I was growing up.  These meatballs are something entirely different, and a healthy alternative.  Jam-packed with flavor, they consist of ground chicken, sliced pancetta (I used sliced prosciutto due to availability, #target), loads of garlic/onion and glazed with tomato paste.  The peperonata that accompanies them is merely baked red peppers tossed with a yummy caper vinaigrette.  Granted the recipe looks like it calls for a lot of ingredients, but the tally will be no more than $25, obviously depending on where you shop.  If you’re not planning on sharing, this recipe is great to make at the beginning of the week.  You’ll have 12 meatball to last you a few days!

And now for the good stuff: Peanut Butter Chocolate Bars aka Crack Bars

These things are THE REAL DEAL.  I want to be mad at my roomie for exposing me to such an addictive substance, but I just can’t. They consist of only 8 cheap ingredients, 2-3 of which you probably already have in the kitchen.
